
Ingredients:
1 lemon
4 eggs
1/2 cup butter, sliced
1 and 1/4 cup sugar
1 nine inch pie crust, unbaked
optional topping: sifted powdered sugar & whipped cream
Directions: Slice ends off lemon and cut into 8 pieces. Remove seeds. Puree lemon in blender. Add eggs, butter, sugar and blend well. Pour into pie crust. Bake at 350 degrees for about 45 minutes (cover crust with foil if browning too much). Let cool to set. If desired, sift with a small amount of powdered sugar and serve with whipped cream.
