Baked Raspberry Custard

  • Ingredients; 

  • ¼cup butter (1/2 stick)
  • ¾ cup whole milk (or cream)
  • 3 large eggs
  • ½ cup sugar
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 6 to 8 ounces fresh raspberries
  • 9-inch pie or tart dish
Directions; 

  • Preheat oven to 400 degrees F.
  • Place the 1/2 stick butter into the pie dish and place in oven just until  butter is melted.
  • Add milk, eggs, sugar, flour, salt, vanilla extract and melted butter from pie dish to mixer bowl.
  • Mix until  smooth (just a couple minutes)
  • Distribute the raspberries into the buttered pie dish.
  • Pour the batter over the berries.
  • Place into preheated 400 degree oven.
  • Bake for 20 to 25 minutes just until set in middle and puffed in appearance.
  • Heat broiler to high and broil for about 2 minutes until nicely browned.
  • Remove from oven.
  • Serve warm and enjoy!
