3 Bean Winter Chili - Slow Cooker


Prep Time: 15 minutes
Cook Time: 7 hours

Yield: Aproximately 4 quarts (16 cups)
The easiest chili recipes ever: combine evertying and let the slow cooker do the work! Hearty and spicy, the chili is brimming with protein and fiber from three types of beans. It has a wonderful chunky texture including crunchy corn and yams!

Ingredients
1 large Yam or Sweet Potato, peeled and small cubed (4 cups)
1 large Yellow Onion, chopped (2 + cups)
2 28-ounce cans Whole Tomatoes, blended with their juice
1 large Red Sweet Pepper, chopped (1 cup)
1 15-ounce can Black Beans, drained and rinsed
1 15-ounce can Pinto Beans, drained and rinsed
1 15-ounce can Great Northern Beans, drained and rinsed
1 Chipotle Pepper en Adobo sauce, chopped
1 cup Corn, fresh or frozen
2 tablespoons Chili Powder
1 tablespoon ground Cumin
½ teaspoon Cinnamon

Instructions

Combine all ingredients in a large slow cooker (6 quarts or more) and cook on High for 7 hours.
