5 Best Mug Recipes


Blueberry mug cake
YIELD: 1 PREP TIME: 4 minutes COOK TIME: 1 minute TOTAL TIME: 5 minutes
INGREDIENTS:

4 tbsp (30g) all-purpose flour
1/4 tsp baking powder
2 1/2 tsp granulated sugar
3 tbsp (45ml) fat-free milk
1/2 tbsp (7.5ml) vegetable oil
1/4 tsp vanilla extract
10 blueberries
DIRECTIONS:

Combine all ingredients except blueberries in an oversized microwave-safe mug. Mix with a small whisk until batter is smooth. Stir in blueberries (Make sure you stir these into the batter. If you leave them on top they might burst open onto your microwave).
Cook in microwave for about 1 minute. If cake is not done, heat an additional 15 seconds. Let cake cool a few minutes before eating. Cake is best consumed while still warm or within a few hours of it being cooked.

5-minute molten chocolate mug cake

Ingredients

1/4 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
2-4 tablespoons coconut sugar (or granulated sugar)
pinch of salt
1 small egg
3 tablespoons coconut milk (or your favorite milk)
coconut whipped cream, for serving**
3 tablespoons coconut oil, melted
1 teaspoon vanilla extract
1/2 - 1 ounce bittersweet or semi-sweet chocolate
1 tablespoon brewed coffee
Instructions

Lightly grease a microwave safe mug with cooking spray. To the mug add the flour, cocoa powder, coconut sugar and a pinch of salt. Whisk it all together with a fork.Add the egg, coconut milk, coconut oil and vanilla. Use a fork to whisk the batter together until just combined. Try to make sure you have incorporated all the flour off the bottom of the mug.Lightly break up the chocolate and place it in the center of the mug. Drizzle the coffee overtop the batter.Place in the microwave and microwave on full power for 1 minute and 30 seconds to 2 minutes. I have a 1200 watt microwave and found 1 minute and 30 seconds was perfect. Allow the cake to cool 1 minute and then dollop with coconut whipped cream and chocolate shavings. Enjoy right away, warm! Oh, and grab a cold glass of milk too!

5-minute chocolate fudge s’mores mug cake
makes 1 serving, can easily be doubled

2-3 tablespoons graham cracker crumbs

3 1/2 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

1 large egg

1/2 teaspoon vanilla extract

1/4 cup whole wheat pastry flour

2 tablespoons unsweetened cocoa powder (mine was dark cocoa, hence the dark color)

1/8 teaspoon baking powder

pinch of salt

1 1/2 ounces milk chocolate (chopped or morsels)

marshmallow fluff, cream or actual marshmallows

Combine 3 tablespoons butter and 1 ounce of chocolate in a small bowl, then melt in the microwave for 20-30 seconds. Set aside. In another bowl, combine remaining melted butter with 2-3 tablespoons of graham cracker crumbs and stir until moistened. Press graham crumbs into the bottom of your mug.

In a bowl. whisk egg, sugar and vanilla until smooth. Add in flour, baking powder, salt and cocoa, stir until a thick batter forms. Stream in melted butter and chocolate, mixing to combine. Fold in remaining chocolate chips. Add half of the mixture on top of the graham crust, then throw on a scoop of marshmallow fluff/cream or a few marshmallows. Add remaining batter on top, then pop in the microwave for 1 minute and 20 seconds to almost 2 minutes. Remove and top with additional marshmallow if desired. You can pop it back in the microwave for 5-10 seconds to make them melty, or pop them directly under the broiler for about 10 seconds to toast if desired. You can also use a kitchen torch if you have one. Sprinkle with graham crumbs!

Notes: If you don’t have whole wheat pastry flour, you can use all-purpose. I would not recommend using regular whole wheat. Additionally, I have made this by substituting coconut butter for the full amount of butter. It was just as delicious, albeit slightly drier. You cannot taste coconut at all. Finally, take into account the power of your microwave. Mine has a mind of it’s own and is insanely powerful, so I cooked this on 80% power. Judge accordingly and add/subtract a few minutes of cooking if you know your’s is wonky too. Unfortunately it may take 1-2 trial runs to get the right consistency because all microwaves are different, but I promise it’s worth it!

Red velvet mug cake

Quick and easy red velvet mug cakes for two, drizzled with caramel sauce and sprinkled with crunchy pecans!

INGREDIENTS
1 egg
3 tablespoons oil
1 teaspoon red food coloring
3 tablespoons buttermilk
1½ teaspoons vanilla
¼ cup sugar
2 tablespoons cocoa powder
¼ cup flour
⅛ teaspoon baking powder
pinch of salt
¼ teaspoon vinegar
toppings: caramel sauce, powdered sugar, pecans (such as Diamond of California pecan halves)
INSTRUCTIONS
In one mug, whisk the egg, oil, food coloring, buttermilk, and vanilla. Add the sugar, cocoa powder, flour, baking powder, salt, and vinegar and whisk until smooth.
Transfer half of the batter to the second mug. Microwave one mug at a time for 60-90 seconds until fluffy but firm. Repeat with second mug. Top with caramel sauce, powdered sugar, and pecans as desired. Enjoy!

Lemon mug cake

INGREDIENTS:

1 tbsp (20g) lemon curd
Frosting (optional; serves 2)

1/2 cup heavy cream
2 tsp granulated sugar
1/2 tsp lemon peel curls or lemon zest
DIRECTIONS:

Combine all cake ingredients except lemon zest and lemon curd in an oversized microwave-safe mug. Mix with a small whisk until batter is smooth.
Add lemon zest and lemon curd and mix until batter is smooth.
Cook in microwave for about 1 minute. If cake is not done, heat an additional 15 seconds. Let cake cool a few minutes before eating. Cake is best consumed while still warm or within a few hours of it being cooked.
If desired, place the whipping cream and sugar in the mixing bowl of a stand mixer and mix on high speed until peaks form. Top cake with whipped cream and lemon peels. Cake is best consumed while still warm or within a few hours of being cooked.
Notes:

The frosting recipe makes enough for 2 because it is very hard to whip heavy cream for only one serving. You can save the rest, eat it, or make 2 cakes instead of one.

This mug cake will generally not rise to the rim of an oversized mug after it is finished cooking. Because microwaves vary greatly, I recommend using an oversized mug on your first try to avoid it bubbling over in the microwave. If it seems like your cake doesn't rise too high when cooking in the microwave, you can always switch out for a smaller mug if you want your cake to have the overflowing look. You can also 1.5 x the recipe as well for the bigger mugs, but I found that the recipe as written is the perfect one serving size.

Nutella mug cake
Makes 1 large mug cake...perfect for sharing. If you're nice like that.
Serves: 1 large mug cake.
Ingredients
¼ C. + 1 T. Oat Flour
¼ t. Baking Powder
Pinch of Salt
2 T. Cocoa Powder
4 T. Coconut Palm Sugar
1 Egg
3 T. Coconut oil, melted
3 T. Almond or Coconut Milk
2 T. Nutella
1½ T. Hot Coffee or Water
FOR THE WHIPPED CREAM:
¼ C. Solid Coconut Cream(usually forms on the top of a can of coconut milk)
1 T. Honey
3 large Strawberries, Chopped
Extra Nutella, for drizzling on top
Instructions
Add the oat flour, baking powder, salt, cocoa powder, and coconut palm sugar to a large mug and combine with a fork.
Add the egg and coconut oil to the mug and mix in with the fork until a smooth batter forms, making sure to blend in all of the flour on the sides and bottom of the mug.
Add the milk and mix in well.
Place the Nutella in the center of the batter and pour the hot coffee or water over the top.
Microwave for about 1 minute and 25 seconds(more or less depending on how strong your microwave is).
FOR THE CREAM:
Whip the coconut cream and honey together with an electric mixer for 2-3 minutes. Fold in the chopped strawberries.
Place on top of slightly cooled mug cake.
Drizzle with more Nutella, if desired.
