Crockpot Chili

Ingredients
  • 1½ pounds Ground Beef
  • ¾ cup chopped Yellow Onion
  • 1 Tbsp Olive Oil
  • 1 can Green Chilies, 4 oz.
  • 2 cans Dark Red Kidney Beans, rinsed and drained {15 oz. each}
  • 2 cans Tomato Sauce {15 oz. each}
  • 2 cans Ro-tel {10 oz. each}
  • 3 large Garlic Cloves, minced
  • 1 Tbsp Chili Powder
  • ½ Tsp Cumin
  • ½ Tsp Ground Mustard Powder
  • ½ Tsp Dried Basil Leaves
  • ½ tsp Cayenne Pepper
  • ½ tsp Black Pepper
  • ½ tsp Salt
  • Grated Cheddar Cheese and Chopped Green Onions for garnish

Instructions
  1. Add 1 tbsp. Olive Oil, Beef, and Chopped Onions to frying pan.
  2. Brown Beef and soften onions in frying pan.
  3. Drain juices from meat and set beef/onion mixture aside.
  4. In a small bowl, mix your Chili Powder, Cumin, Mustard Powder, Basil, Cayenne Pepper, Black Pepper and Salt.
  5. Add all ingredients {except cheese and green onions} to 6 - 7 quart Crockpot and stir well.
  6. Cook on HIGH for 2 hours, or LOW for 4 hours, stirring every 30 minutes.
  7. Garnish with grated Cheddar Cheese and chopped Green Onions. ENJOY!
